Carrot & Cilantro Salad

This fresh carrot and cilantro salad is a delightful addition to any table, embodying the essence of wholesome, nourishing eating. Carrot & Cilantro Salad

This salad not only tantalizes the taste buds but also offers a myriad of health benefits. Carrots, rich in beta-carotene, are renowned for supporting eye health and boosting immunity. Meanwhile, cilantro provides a burst of freshness while boasting antioxidants and aiding in digestion.

Ingredients

  • 1 lb Carrots thinly sliced or grated
  • 3 Tbs Fresh Cilantro finely chopped
  • ¼ cup Feta cheese crumbled
  • ¼ cup slivered almonds toasted lightly
  • 2 Tbs Olive oil
  • 1 Tbs Honey
  • 3 Tbs Raw apple cider vinegar
  • ½ tsp Sea salt
  • ½ tsp Freshly ground black pepper
  • tsp Chipotle powder for added heat

Instructions

  • Thinly slice or grate washed carrots. Add to a medium size bowl.
  • In a small container (I use a pint mason jar) mix together the vinaigrette ingredients- olive oil, honey, raw apple cider vinegar, salt, pepper and chipotle powder. Mix well
  • Add the toasted almonds and feta cheese to the carrots. Mix well. Pour the vinaigrette over the salad and mix. This salad keeps very fresh for a few days in the fridge. Enjoy!
