Nourishing Protein Pancakes
These protein pancakes are a quick, easy, and nourishing way to start your day. Ingredients
- 8 eggs organic and pasture raised
- 1 cup cottage cheese
- 1/3 cup flour- all purpose, einkorn, almond or ground oatmeal for the nut flour and oatmeal, you may need to add a total of 1/2 cup.
- 1/4 cup avocado or olive oil
- 1/4 tsp sea salt
- 1 tsp vanilla
Pumpkin Protein Pancakes- add 1/4 cup pumpkin puree, 1 tsp. pumpkin spices and an additional 2-3 TBS flour.
Instructions
Place all ingredients in a blender. Blend on high until a smooth, thin batter is acheived.
- Heat a griddle or cast iron pan on medium heat.
- Add 1 Tbs of butter, oil or lard to the pan. Melt completely.
- Pour pancake batter onto hot pan. The batter will be thin, a little thicker then crepe batter, but easy to pour.
- Watch for bubbles to form around the edges of the pancake and then gently flip it to the other side until a golden brown in color develops.
- These are thin, delicate pancakes that keep well in the refrigerator or freeze well.
Notes
These pancakes are quick to make in the blender and such a great protein source to start your day! The recipe is so versatile by using your favorite flour, nut flour or oat flour to make this low carbs as well. Eating the pancakes with sausage links is a perfect fast food breakfast! Add fresh berries and yogurt for a creamy treat.
