There’s something timeless and comforting about a beautifully roasted leg of lamb—especially when it’s raised with care, right here on our farm. This recipe has become a true family favorite, often gracing our table when we welcome guests or celebrate a special occasion. The roast itself is tender and full of natural flavor, but what truly sets this dish apart is the vibrant herb vinaigrette drizzled over the top just before serving.
Bright, fresh, and brimming with garden herbs, the vinaigrette adds a pop of flavor that complements the mild, buttery richness of the lamb. It’s simple, yet elegant—rustic enough for a Sunday dinner, and refined enough for a festive gathering. We think it’s the perfect way to showcase the beauty of pasture-raised lamb and the joy of cooking with fresh, seasonal ingredients.
